Driving in the USA is actually a lot easier than driving in the UK sometimes, for starters they don't have roundabouts. All the cars you will hire are automatic and so all you have to think about is where you are going.  Most roads are straight and highways (motorways) are very wide and open. 

If you are nervous then why not pick up you car the day after you land? you are bright-eyed then and will see how easy the roads are before you pick up the car.

Of course you will be able to. Their staple cusine is of course BBQ food which is rich in flavour but like anywhere they have alternatives on the menu, healthy options and in some coastal resorts they have some of the best seafood in the world.
